Feb/March Cupcakes!!

It’s been a few days since we opened with our post Valentine’s Day cupcake flavors, but I’ve FINALLY finished. (almost!) I still have one more flavor that I finalized last night, but need to make the buttercream, so I’ll post that later.

Since Valentine’s Day is in the middle of February, we changed over the flavors mid month and now it’s all about Saint Patrick’s Day, and the Luck of the Irish, Erin Go Brough, and Kiss Me I’m Irish..yadda yadda yadda

For starters, we’ve got our good old Guinness Stout cake. This year I wanted to make it much more special. My good friend The Gregarious Homebody’s husband posted a link to some shop selling Beer Marshmallows and I thought that would be brilliant.

So as it turns out, this shop calls them “beer Marshmallows” because they are dipped in chocolate and pretzels and are good to EAT WITH BEER. Meaning, the contain NO beer! What a farce.

I figured since I had a six pack of Guinness, why not try out making marshmallows with it. And I did. And it was a very big pain in the ass. I used my standard marsmallow recipe, but instead of water I used the beer. Mixed the beer with the gelatin, no problem. Boiling sugar, beer, and corn syrup to 244 degrees. BIG problem. The syrup boiled over and out of my pot, setting off the smoke detector completely messing up my burner. I transferred the mixture to a bigger pot (after 30 minutes of cleanup) and started all over again. It took FOREVER to get to temp and even in a bigger pot threatened to overflow several times.

As you can see, I finally reached temp, but seriously almost gave up on the whole project all together.

In keeping with the beer and pretzel theme, I dipped the very tops of the marshmallows in ganache, then stuck a pretzel to it, let it set up for a few minutes and dipped them again. And there you have it, a really delicious marshmallow that not only is great to eat with beer, but actually CONTAINS beer!!

Green Hostess. Really a no brainer. Everyone LOVES the Hostess, no matter what color the filling is.

Pink Hostess, Green Hostess. It’s all good.

Green Velvet, Red Velvet, whatever. People love the red velvet, so I figured Green Velvet would be just as good. (plus who can ever get enough really great cream cheese frosting?)

Not every cupcake in the shop can be all about St. Patty’s Day, so this is like an Elvis minus the bacon. (still can’t get myself to cook bacon in my bakery)

Banana cupcake with peanut butter buttercream and a drizzle of local honey.

I can’t really say what is my favorite, but the Peanut butter buttercream is just so delicious. Can they all be my favorite??

I’ve still got Coffee Almond Crunch in the works and I’ll post as soon as I wrap that up. In the meantime, stop in for some cupcakes, and be careful, the driveway is melting!!

    I can just imagine the smell of that burning beer/sugar combo. Now I feel a curious mix of totally afraid to try it/really want to try it! Love the dipped pretzel on top.

    Last year on a whim I made bacon peanut brittle and OMG it was ah-maz-ing! I bet it would be great on top of your Elvis cupcake. I don’t think I blogged the recipe (I’ll come back with a link if I find it later) but I’m sure you can google and find plenty of recipes online. It was seriously amazing- the salty and sweet and chewy and crunchy.
