Eating Al Fresco (plus some cat pics!!)

Thursday, July 8th, 2010

Since we have a super nice deck built by Dave and my Dad last year, we’re trying to enjoy it as much as possible. Given our hectic work schedule, it can be a bit challenging.

On the nights that we get out at a reasonable hour, we love to eat our dinner outside. One night earlier this week we had some super delicious tofu tacos. Really when it comes to tacos for me it’s not so much about the protein, but more about all the accoutrement. You know, really good shredded cheddar cheese, sour cream, onions and peppers, jalapeno, fresh tomatoes, and of course avocado, or some mashed avocado with lime, cumin and salt. I could skip the tofu all together, and just forget about chicken, fish or steak, just load up my fresh corn tortilla with a big pile of the above mentioned  accessories.

tofu tacos

I know the tofu doesn’t look spectacular, but it really is quite good. I used extra firm tofu, let it sit on lots of layers of paper towels for about an hour, then coat it with a big sprinkle of cumin, chile powder, and salt. Saute it in some oil until it’s browned and then place on paper towels to drain the oil. I made the mistake of leaving it on the paper towels for this picture. I’m not that well thought out.

To drink there’s always some kind of margarita, but my beverage of choice lately is Sangria. I always have a pitcher of it in the fridge. It’s like grown up fruit punch.

casper and frankie in Lily’s bed

And here are my two babies, Casper and Franklin sleeping in Lily’s bed while I wash the cover. They’re nuts and they love dog stink. I don’t know why, but they love to sleep in both of Lily’s beds and they like to sniff her feet. Weird.

Casper in the big window

She’s a little washed out here, but this was one morning that I was sitting at the door table looking at our pond (which you can’t see, but that’s a rowboat right next to her face.) So green and peaceful.

Then she takes a few steps to the left, and it’s not so peaceful anymore. Our house and bakery are on about 4 acres and it’s lovely and serene, except that we are on a “super highway”. Tons of loud dairy trucks, logging trucks, and the occasional pre-fab house are constantly driving by. But it’s ok, we still love it here.

green

Everything is so green right now, and on the days that we get the lawn mowed it’s so beautiful to look at and to smell.

mantel

And on to another random topic, I think I’ve finished accessorizing the mantel for now. I’m pretty happy with it, but I’m no expert. I happened upon the greens in the vase on a marathon sprint through Ikea one night.

If there are uglier bricks out there let me know. These are horrible. In our basement we have the most beautiful stone fireplace, but it’s about 2 feet from the propane tank. And it’s in the basement. I don’t know why they’d put the gorgeous fireplace in the cellar and the shiteous one in the living room. We’re considering painting it. Anyone have any thoughts on that??

I was hoping to get a professional designers opinion on the living room updates, but the last time she was here I don’t think she noticed anything. Must not be so great.

Anyway, this was a totally random post with absolutely no consistent theme, but it’s stuff we’ve got going on and I thought it would be fun to share.

By no means am I a fireplace expert, but I agree that it could use some updating. Call Ruxana (in Rutland) for a consultation at 802-236-3055 (www.rutlanddesigner.com). You cannot find a more friendly, outgoing, and upbeat woman. She’s great!

    Laura,
How do you make you Sangria? It has become my drink of choice as well and I am almost certain that you would have a great recipe for it. I hope to hear back. Tell Dave I said hello!

I’d paint it. Or build something over it. Seems it should be larger for the space it’s in. But I love what you’ve placed on the mantel. It looks great! ~~Rhonda

Yum!!! The food looks fantastic, you made me go out to buy avocados, lime, cumin & salt just to make that today!!

    Love your blog! =)

The accessories look great- I like the asymmetrical balance. To complete the look, white-wash the bricks and cover the mantle with a weathered piece of barn board.
