Along with the millions of cookies in production this week I tested out a great cupcake recipe. It’s actually an adaptation of the Perfect Party Cake recipe from Dorie Greenspan.
It’s a really yummy cupcake, especially for Easter or Spring. Instead of layering the buttercream and raspberry filling, I filled the cakes with raspberry and frosted each cake with the lemon buttercream, then garnished with some sweetened coconut.
I was surprised that Dave liked this particular flavor so much as he’s a “chocolate double layer” kind of guy. But that just goes to show how delicious this cupcake really is.
Since we were SO busy this week we didn’t eat too fancy, but I did manage to make some pizza dough and home made basil pesto for a couple of great pizzas.
My personal favorite is pesto, sun dried tomatoes and goat cheese, so good.
While dave likes to stick with a basic tomato, mozzarella and basil combo.
You can see that I need some practice with pizza dough, I didn’t really get a good shape on either of my pizzas. But it really didn’t matter to us, they tasted great fresh out of the oven and if you all could have smelled the bakery as these were baking…….
The pizza also made for a tasty lunch for the next two days.
Today I’ll be wrapping up some Beantown cookies and then finishing a cake order to be delivered this afternoon.
This will be my 2nd official cake order and hopefully there will be more to come!!
And finally I can prepare for Easter!! Nothing big just 4 people for brunch, and guess what’s for dessert??

WOW…..if I could eat pizza everyday I would! and the cupcake…….well that would be icing on the cake…..so to speak! lol

Mmmm. I found they made really nice cupcakes too, very delicate and delicious! They dont get the ‘dome’ like some cakes, they are quite flat on the top but everyone loves them. Good idea about the filling, I need to try out more filling ideas in my cupcakes…

Oh man, those lemon raspberry cupcakes look really great. OMG, I can just taste it right now looking at it. I’m a big fan of raspberry and I think the lemon goes well with it. What a nice refreshing combonation. Happy Easter and have a fun and Springy weekend. I can’t wait to hear what your going to prepare for Easter brunch. Take care girl.

Yum! I make cupcakes similar to that but I just do a cream cheese frosting w/raspberries on top. I love white cake and raspberries. So fresh and yummy!

The cupcake and the pizza looks fantastic!
Do you pump the raspberry filling in after the cupcake is baked, or do you bake it into the cupcake? I am making raspberry linzer bars tonight for Easter desert — they are simple to make, and delicious!
